He is probably 4 and his job, which he was taking a rest from, was to dunk the ears of corn in ice water before handing them off to his older brother who was putting them on a roaster. His parents were selling the roasting ears just a few feet away and all the family was helping.

I learned from this man the coloring is traditional. The red is from red ochre mixed with bear grease or lard, the black is charcoal and grease.

The man on the left is from Indiana and the other is from Illinois, portraying Shawnees. The man on the right portrayed a Kaskaskia Indian last year. Both work hard in being accurate in their portrayals.

This man was camping at the edge of the woods at Fort de Chartres with the 2 other Shawnee scouts. They live for several days just as Native People would have centuries ago. He was explaining about squash, beans and corn and their importance in Native cultures.

The docent explained the French, in 1740, when this garden is portrayed, used raised beds. No tomatoes here, but garlic, onions, peas and beans.

Billy can produce plugs of this very attractive hibiscus, on order. Green, white and red variegation, very striking! When I have groups here for meals, I serve the dessert on individual leaves of this plant.

Hopkins has jackfruit plants, too. I had not ever seen a jackfruit soon after it had set and this is what it looks like. The male flowers are on their own branches, the female flower is on a sturdier, female branch.

Lemon verbena ((Aloysia triphylla) is a great plant for the garden. I grow it as an annual but it will withstand some frost in the fall. The tri-color hibiscus is a stunning plant, not hardy in Zone 6, but worth bringing inside. I use individual leaves, which can vary from red/pink to green or white and all combinations in between, for placing under desserts on plates in summer. The red leafed one is Hibiscus acetosella and is sometimes sold as a patented variety under the 'Maple Leaf' of 'Sugar Maple' Hibiscus names.

We added a new gate to the garden this year, or rather, replaced an old one. Yes, it's actually blue, which matches a few other blue items in the garden. Some blue morning glories and red cardinal climber growing next to it, made it really shine this season.

The orchid pepper I grow came from Madalene Hill, in Texas. The peppers hang down like little bells. The seed have a bit of heat, but the pepper itself tastes, as Madalene said, "Like good bell peppers tasted before they were hybridized." It's a great pepper to grow.

Vietnamese cilantro is perfect for growing in the heat of summer. This one likes sunshine, hot weather and lots of moisture. Just be sure you prune it every 10 days or so as only the fresh, young growth is tasty. Old growth tastes like aluminum foil with a bit of sugar! But the young leaves taste great in any dish where you would put cilantro. Yumm.

It's not a snowflake! This is the blossom of snakegourd (Trichosanthes cucumerina), and is about the size of a nickel. Each day brings new blossoms and the more you pick snakegourd, the more you get. Snakegourds (Trichosanthes cucumerina), along with some loofahs. Snakegourds are both a vegetable in Indian and Asian dishes, and a medicinal plant. They are very different plants.

Cumin scented perilla is a really great plant for stir fries, appetizers and other dishes. It has a strong cumin fragrance and flavor and has virtually no insect pests.

Look at the variety of colors on one plant. This is Vietnamese fish pepper, a hot pepper about the size of your little finger and it really is good in fish dishes! The foliage is variegated and the peppers are often stripped green and white, or all green or all white. They darken to orange/green to red/green stripes, then finally all red. It's a great pepper to grow if you like heat.

Spice bush, Lindera benzoin, is a native plant that grows from Georgia to Ohio in damp woods and full shade. The leaves, stems and berries are all used for an excellent seasoning for meat dishes, soups and stews and is especially good with venison. The plant blooms (in the Ozarks) in February.

Papalo, also known by the common name, "Buzzard's breath." Once you smell it, you'll know why! The way it's sold, and used, is young cuttings. The more it's harvested, the better the flavor, which is kind of cilantro, lemon and another fragrance that's hard to describe. Young, pulled seedlings are sold in the markets in Mexico. Mexican mint marigold (Tagetes lucida) is a great tea and cooking herb. The tea is stimulating, much like caffein. The flavor is much like French tarragon, but is a hardier plant in Zone 6 and warmer, and unlike French tarragon, this one likes summer heat. I have trouble getting tarragon to live more than a year in my garden but M.Mint.Marigold just keeps coming back and thriving.
